Saperavi - Standing Stone

A particularly special wine for us as we age our Saperavi in a sandstone jarre that bears a resemblance to traditional amphora that have been used in winemaking from the very beginning and specifically recalls the use of qvevri (amphora buried underground) utilized in traditional Georgian winemaking culture, where Saperavi originates. Amphora are neutral vessels (like stainless steel they impart no flavor) but like oak barrels, they allow the wine to breathe (also known as micro-oxygenation) therefore combining two favorable qualities.
