It seems that all of the traditional "refreshing wine language" words apply- bright, fresh, zippy, vibrant, and even vivacious to name but a few. This wine is a perfect combination of the historic knowledge of traditional method sparkling winemaking at Hermann J. Wiemer Vineyard coupled with our Standing Stone site's enigmatic Saperavi (a variety that we are absolutely thrilled to be working with and exploring). There is something quite special about the interplay between the acidity from the Saperavi and the way it interacts with the bubbles on the palate. A short lees aging (just 9 months) keeps the flavors fruity and light and zero dosage at disgorgement means that it is fresh and impeccably dry.
