The 2025 Saperavi Dry Rosé is here with notes of ripe cherry, lime zest, and crunchy cranberry, along with the fresh minerality it has become known for since its inaugural vintage in 2017. Hand-picked and hand-sorted, then direct-pressed (as the name conveys- Saperavi is a teinturier variety and therefore skin contact is not needed to achieve its vibrant hue). This is a food-friendly wine to be sure and can stand up to many dishes, including springtime favorites- like asparagus, savory rhubarb compote, and spring pea risotto.
